Guest guest Posted December 30, 2001 Report Share Posted December 30, 2001 * Exported from MasterCook * Three Kings' Cake (Rosca De Los Reyes) Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 146 Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 recipe Fat-Free Sweet Yeast Bread Dough 1 teaspoon ground anise seeds 2 cups mixed glaceed fruit chopped OR mixed dried fruits -- chopped (if they are very dry -soften slightly by soaking briefly in hot water) 1 Double recipe for Powdered Sugar Glaze OR double recipe for White Glaze flavored with pure lemon extract instead of vanilla additional glaceed or chopped dried fruit -- for decorating Makes 2 loaves This traditional Mexican sweet bread is usually served on Twelfth Night (Epiphany), but it can be served anytime during the holiday season. It makes a great breakfast bread. Traditionally, an unshelled almond, a ring, or a coin is rolled up in each loaf with the fruit. Whoever gets this prize is assured good luck in the coming year. If you do this, warn your guests so that they done inadvertently bite into it and crack a tooth! The evening before serving, follow the directions for the Fat-Free Sweet Yeast Bread Dough, adding the ground anise seed along with the turmeric. The next morning, remove the risen dough from the refrigerator, and divide it exactly in half. Lightly flour your work surface, and keep the second half of the dough covered while you work with the first. Roll each half of the dough into a rectangle about 8 " wide and 24 " long. Sprinkle each half with 1 cup of the fruit. Roll each rectangle lengthwise jelly-roll fashion, and pinch the edge of the dough to the body of the roll to seal. Place each roll seam side down on a lightly oiled cookie sheet, and shape into a ring. Press the ends together to seal. Cover and let rise in a warm place until puffy, about 1 to 1 1/2 hours. Preheat the oven to 350F. Bake the rings until golden, about 30 minutes. Transfer loaves carefully to wire racks, and cool. Decorate with one of the glazes and the additional fruit (the fruit is meant to look like jewels in a crown).
