Guest guest Posted December 29, 2001 Report Share Posted December 29, 2001 * Exported from MasterCook * Spinach Feta Pies Recipe By : Vegetarian Times Vegetarian Entertaining, page 7 Serving Size : 8 Preparation Time :0:00 Categories : Breads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces fresh spinach 1 tablespoon olive oil 1 medium yellow onion -- finely chopped 2 garlic cloves -- minced 1/4 cup water 1/2 teaspoon freshly ground black pepper 1 pound chilled bread dough or pizza dough prepared or homemade 2 ounces crumbled feta cheese -- up to 3 (1/2 cup) Preheat the oven to 375F. Rinse the spinach under cold running water and remove the stems. Pat the spinach dry and coarsely chop the leaves. In a medium saucepan, heat the oil over medium heat. Add the onion and garlic and cook, stirring, for 2 to 3 minutes. Add the spinach, water, and pepper and cook over medium heat, stirring frequently, until the spinach is wilted, about 2 to 3 minutes. Remove pan from heat and let cool slightly. Drain the excess liquid from pan. (If it cools enough, gently squeeze the spinach like a sponge over a colander.) On flat work surface, form the dough into 8 equal balls. Roll each ball into a thin flat circle about 4 inches in diameter. Place 1 heaping tablespoon of the spinach mixture and 1 teaspoon of feta cheese in the center of each round. Fold the dough over the top and seal the edges with the back of a fork, forming a crescent-shaped pocket. Place the pies on a lightly greased baking sheet and bake until golden brown, about 11 to 13 minutes. Remove from the oven and let cool for a few minutes before serving.
