Guest guest Posted December 29, 2001 Report Share Posted December 29, 2001 * Exported from MasterCook * Lentil Mushroom Soup Recipe By :Gradual Vegetarian (1985) Lisa Tracy Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried lentils 2 peppercorns 2 carrots -- thickly sliced 8 ounces sliced mushrooms 1 medium onion -- thinly sliced 1 tablespoon oil or butter tamari soy sauce or salt In a deep kettle, bring 1 quart water to a boil and add lentils, peppercorns and carrots. Cook half an hour or until nearly tender. Saute mushrooms and onion in the oil and add to the lentils. Cook until the lentils are tender, but not mushy, adding more water if needed. Season with tamari or salt, to taste. Serve with dark bread. Per Serving: 155 Calories; 3g Fat (15.6% calories from fat); 10g Protein; 24g Carbohydrate; 11g Dietary Fiber; 0mg Cholesterol; 14mg Sodium.
