Lentil Mushroom Soup

Amount Measure Ingredient -- Preparation Method

1 cup dried lentils

2 peppercorns

2 carrots -- thickly sliced

8 ounces sliced mushrooms

1 medium onion -- thinly sliced

1 tablespoon oil or butter

tamari soy sauce or salt

 

In a deep kettle, bring 1 quart water to a boil and add lentils, peppercorns and

carrots. Cook half an hour or until nearly tender. Saute mushrooms and onion in

the oil and add to the lentils. Cook until the lentils are tender, but not

mushy, adding more water if needed. Season with tamari or salt, to taste. Serve

with dark bread.
