Sweet Potato Dal

1 1/2 tablespoons canola oil

1 medium yellow onion -- finely chopped

2 garlic cloves -- minced

1/2 teaspoon turmeric

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

OR garam masala

1/4 teaspoon freshly ground black pepper

1 cup green or red lentils -- rinsed

4 cups water

2 cups peeled diced sweet potatoes

1/2 teaspoon salt

4 rounds chapati or roti or naan -- up to 6

OR flour tortillas

 

Makes about 4 cups.

 

In a large saucepan, heat the oil over medium heat. Add the onion and

garlic and cook, stirring, for 4 minutes. Stir in the turmeric, cumin,

coriander or garam masala, and pepper and cook for 1 minute more. Stir in

the lentils and water and cook uncovered over medium-low heat for 15

minutes, stirring occasionally.

 

Stir in the sweet potatoes and cook, stirring occasionally, until the

lentils are tender, about 30 to 40 minutes more. Stir in the salt.

 

Transfer to a large serving bowl. Serve with Indian flat bread or flour

tortillas.
