Guest guest Posted December 29, 2001 Report Share Posted December 29, 2001 * Exported from MasterCook * Sweet Potato Dal Recipe By : Vegetarian Times Vegetarian Entertaining, page 6 Serving Size : 1 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 tablespoons canola oil 1 medium yellow onion -- finely chopped 2 garlic cloves -- minced 1/2 teaspoon turmeric 1/2 teaspoon ground cumin 1/2 teaspoon ground coriander OR garam masala 1/4 teaspoon freshly ground black pepper 1 cup green or red lentils -- rinsed 4 cups water 2 cups peeled diced sweet potatoes 1/2 teaspoon salt 4 rounds chapati or roti or naan -- up to 6 OR flour tortillas Makes about 4 cups. In a large saucepan, heat the oil over medium heat. Add the onion and garlic and cook, stirring, for 4 minutes. Stir in the turmeric, cumin, coriander or garam masala, and pepper and cook for 1 minute more. Stir in the lentils and water and cook uncovered over medium-low heat for 15 minutes, stirring occasionally. Stir in the sweet potatoes and cook, stirring occasionally, until the lentils are tender, about 30 to 40 minutes more. Stir in the salt. Transfer to a large serving bowl.
