Recipes make 6 to 8 servings. 3 TO 4 HOURS BEFORE: Make the Cranberry Pumpkin Bread. 3 HOURS BEFORE: Make the Roasted Eggplant and Cucumber Dip. 3 HOURS BEFORE: Make the Confetti Quinoa Salad and refrigerate. 2 HOURS (and up to 1 day) BEFORE: Prepare the Sun-Dried Tomato Hummus with Pita and refrigerate. 1 1/2 HOURS BEFORE: Make the Sweet Potato Dal. 30 MINUTES BEFORE: Bake the Spinach Feta Pies.
