Three-Pepper Pasta - Indian Style

2 tablespoons olive oil

1 teaspoon cumin seeds

1 medium red onion -- thinly sliced

1/2 teaspoon salt

1/4 teaspoon Garam Masala

1/4 teaspoon freshly ground black pepper

1/4 teaspoon ground red pepper

(chili powder or cayenne)

1/8 teaspoon turmeric powder

1/2 tablespoon butter

1 medium green bell pepper

cut into 2-by 1/4-inch strips

1 medium red bell pepper

cut into 2-by 1/4-inch strips

1 medium yellow bell pepper

cut into 2 by 1/4-inch strips

1 pound penne pasta

cooked al dente in salted water

1 tablespoon finely chopped cilantro -- up to 2

for garnish -- (optional)

 

Serves 4.

 

Heat olive oil in a 10-or 12-inch cast iron skillet or saucepan over

medium-high heat until hot. Add cumin seeds and fry for 10 to 15 seconds

until they turn a darker brown. Add onions and cook for 2 to 3 minutes,

stirring occasionally until the onions turn translucent. Add salt and the

remaining spices, and fry for 20 to 30 seconds.

 

Add butter and green peppers, and cook for 4 to 6 minutes, stirring

occasionally, until the green peppers are tender. Add red and yellow

peppers, and cook for additional 5 to 7 minutes, until all peppers are

cooked and mixture has reduced a little.

 

Transfer cooked pepper mixture to a serving bowl. Add pasta and mix

well. Garnish with finely chopped cilantro if desired.
