Tagliatelle with Green Peppercorns

14 ounces tagliatelle

salt

2 tablespoons olive oil -- may double

1 tablespoon green peppercorns

freshly ground black pepper

chopped fresh parsley or chervil -- for garnish

freshly grated Parmesan cheese

or pecorino for garnish

 

1. Fill a large saucepan with 4 quarts of water and bring to a boil over high

heat for the pasta. When ready, add pasta along with a tablespoon of salt and

give pasta a quick stir. Briefly put the lid on until it start to lift, showing

that the water has come back to a boil, then let the pasta bubble away,

uncovered, for about 8 minutes or until it is tender but still has some bite to

it.

 

2. Drain the pasta by tipping it all into a colander placed in the sink, then

put it back into the still warm pan, add the olive oil, green peppercorns and

salt and black pepper to taste, toss gently and serve on warm plates with herbs

and cheese scattered over the top.

 

TIP - The peppercorns are described as piquant. We assume she is referring to

peppercorns that are picked when green, dehydrated, then packed in brine. Capers

could be substituted. Capers are the unopened flower bud of the caper bush.

Usually pickled in vinegar or brine and tarragon, capers are used to season

sauces, cold meats and fish. Their flavor is peppery, sharp and salty-sour, with

the finest flavor found in the smallest buds.

NOTES : Piquant green peppercorns make a pleasant contrast with bland pasta.

This is also good made with spaghetti or one of the short pasta, such as penne,

if you prefer.
