Spaghetti with Sweet Red Pepper

8 ounces spaghetti

1 large red bell pepper

1 tablespoon olive oil

1 onion -- chopped

1 large clove garlic -- minced

salt and black pepper

black olives (optional) -- (a few)

1 tablespoon chopped fresh basil -- may double or omit

 

Bring a large pan of water to the boil, then add the pastas. Stir, then let the

pasta boil, uncovered for 7 to 10 minutes, until just tender.

 

Meanwhile, cut the pepper into 8 slices (top to bottom), removing seeds. Heat a

broiler to high and rill the pepper until the skin has blistered and charred in

places. Remove the pepper from the broiler, cover with a plate and leave to

continue to cook in their own heat.

 

Heat the oil in a pan, Add onions and garlic and cook gently for 10 minutes,

until softened.

 

Drain the pasta, return it to the saucepan, then add the onion, garlic and oil

left in the pan and some salt and pepper.

 

Peel the skin from the pepper slices. Cut into strips and add to the pasta,

together with black olives and basil, if using. Serve at once.
