Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons olive oil 1 small yellow onion -- thinly sliced 1 large sweet potato -- peeled and cut into 1/2-inch dice 1 large Granny Smith apple -- cored and thinly sliced 1/4 cup chopped golden raisins salt and freshly ground black pepper 1 pound penne 1/4 cup chopped pecans -- toasted Serves 4 This surprising combination of sweet potatoes, apples, and raisins makes an interesting change from the normal pasta routine. The toasted pecans add texture and flavor to this colorful autumn dish. Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the onion and sweet potato, and cook, covered, until the potato softens, about 8 to 10 minutes. Add the apple, raisins, and salt and pepper to taste, and cook 3 to 5 minutes longer or until the apple softens. Keep warm over low heat. Cook the penne in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 to 10 minutes. When the pasta is cooked, drain it and place in a large serving bowl. Add the sweet potato and apple mixture and the remaining olive oil, and toss gently to combine. Garnish with the pecans and serve immediately.
