Mock Stroganoff

Amount Measure Ingredient -- Preparation Method

2 cups TVP flakes/chunks

1 can Arrowhead Mills Mushroom Broth

1 tablespoon Kitchen Bouquet

1 large onion -- chopped

1 clove garlic -- crushed

1 can Campbell's Healthy Request Mushroom Soup

1 cup fat-free sour cream

1/2 cup Edensoy Organic Soy Beverage

3 ounces canned mushroom pieces -- drained

2 tablespoons Worcestershire sauce

2 tablespoons catsup

salt and pepper -- to taste

Minute Rice or fat-free noodles

 

Serving Size: 6

 

Pour mushroom broth in large sauté pan, heat to boiling. Turn off heat,

stir in the TVP cover and let soak for 10 minutes. Add onion, garlic and

salt and pepper to taste, to the TVP. Turn heat back up and simmer for 15

- 20 minutes until TVP and onion are fork tender but not mushy. Add soup,

soy milk, mushroom pieces, sour cream, Worcestershire sauce and

catsup. Simmer for an additional 15-20 minutes, stirring often. Serve

over rice or noodles.
