Guest guest Posted December 27, 2001 Report Share Posted December 27, 2001 * Exported from MasterCook * Mock Chicken Enchiladas Recipe By : The Cooking Cardiologist, by Richard Collins, page 112 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 low fat flour tortillas 2 cups fat-free sour cream 2 packages Hidden Valley Ranch dressing/dip mix 2 cups fat-free cheddar cheese -- shredded 4 1/2 ounces canned chopped black olives 2 cups White Wave Chicken Slices -- cubed Serving Size: 6 Mix together sour cream, 1 package dry dressing, 1 cup of the cheese, olives and cubed chicken. (Trim tortillas on two sides so that they roll and fit in the pan better.) Use a 9 x 13 inch baking dish that you have sprayed with cooking spray. Place filling on tortillas and roll up. Place seam side down in baking dish. Sprinkle with remaining cup of cheese and 1 package of dressing. Bake in a 350 degree oven or 20 minutes. Serve with extra salsa or taco sauce.
