Guest guest Posted December 26, 2001 Report Share Posted December 26, 2001 * Exported from MasterCook * Sweet Red Pepper Soup with Basil Recipe By :Vegan Feasts by Rose Elliot Serving Size : 4 Preparation Time :0:00 Categories : Rose Elliot Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped 1 tablespoon olive oil 4 red bell peppers -- 1/2-inch dice 2 garlic cloves -- crushed or minced 1 1/2 cups peeled diced potatoes -- 1/2-inch cubes 3 3/4 cups water or light vegetable stock salt freshly ground black pepper 1/2 lemon -- juiced fresh basil sprigs -- garnish coarsely ground black pepper -- garnish Heat oil in large saucepan. Add onion and cook without browning for 5 minutes. Add the peppers, garlic and potatoes. Stir well, then cover, and continue to cook gently for a further 5 to 10 minutes, taking care not to brown the vegetables. Add water or stock, bring to the boil, cover and simmer for 15 to 20 minutes, until the vegetables are very tender. Puree the soup in a blender or food processor and return it to the cleaned pan, adjusting the consistency with extra water, if necessary. Reheat the soup and add the lemon juice, a tablespoons at a time until it is how you like it. Season with salt and pepper to taste. Serve garnish with basil and pepper. VARIATION: * replace red with yellow bell peppers.
