Guest guest Posted December 24, 2001 Report Share Posted December 24, 2001 * Exported from MasterCook * Creamy Potato and Onion Soup Recipe By :Vegan Feasts by Rose Elliot Serving Size : 6 Preparation Time :0:00 Categories : Rose Elliot Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 onions -- sliced 1 pound peeled potatoes -- cut into even chunks 4 1/3 cups water 3 tablespoons vegan margarine 1 tablespoon olive oil salt black pepper freshly ground nutmeg Put a quarter of the onions into a large saucepan with the potatoes and water. Bring to the boil, then cover, and cook for 15 to 20 minutes, until the potatoes are tender. Meanwhile heat the margarine and oil in another pan. Add remaining onions and cook them over a low heat, covered for about 15 minutes, until they are very tender. Don't let them brown. Puree the potato mixture in a blender or food processor, then return potatoes to the saucepan. Add the onions and salt, pepper and grated nutmeg to taste. Reheat gently and serve.
