Hot and Sour Soup Gartenstein

Amount Measure Ingredient -- Preparation Method

6 cups veggie stock -- (to 8 cups)

2 cloves garlic or more -- minced

2 tablespoons grated ginger root

10 mushrooms -- chopped

(A variety: button, shiitake, oyster...)

2 carrots -- cut in thin strips

6 ounces bamboo shoot strips -- drained

6 ounces sliced waterchestnuts -- drained, finely chopped

1/2 cup peas -- fresh or frozen

4 tablespoons soy sauce -- or to taste

3 tablespoons rice vinegar

1 tablespoon toasted sesame oil

1 teaspoon chile oil -- may triple to taste

 

1. In medium stockpot, bring the stock to a boil, add onions, garlic, ginger,

mushrooms and carrots. Boil, covered for 30 to 40 minutes.

 

2. Add remaining ingredients except sesame and chile oils and cook another 5 to

10 minutes.

 

3. Add the oils and serve.

 

SERVING SUGGESTIONS:

* with Chinese veggies and black bean sauce

* with lo mein
