Miso Noodle Soup Gartenstein

1 package kombu (kelp)

3 quarts Veggie stock -- divided

1 onion -- chopped

2 tablespoons grated ginger root

3 carrots -- sliced

1/2 cup low sodium soy sauce

1/2 pound frozen peas

1 pound firm tofu -- cut: small cubes

1/2 pound rice noodles

3 tablespoons miso (any kind)

3 tablespoons rice vinegar

 

1. Soak kombu in enough stock to cover it. When it softens, cut it into bite

sized pieces. Save the stock and add it to the soup later.

 

2. In a medium stockpot, saute the onion and ginger in one cup of stock until

the onion is tender.

 

3. Add all the remaining stock, carrots and kombu pieces. Bring to a boil and

simmer for 5 to 10 minutes, then add the soy sauce, peas, and tofu, and simmer

another 5 minutes.

 

4. Turn off the heat and add the rice noodles. Skim off a cup of stock, dissolve

the miso in it, then add this to the soup along with the rice vinegar.

 

5. Let it stand, covered, about 10 minutes, until the rice noodles are soft,

then serve.

NOTES : " This is a hearty, strange, satisfying soup. When I first tasted it I

was a big unsettled by the kombu, but now I pick out the chewy pieces and eat

them first. I like to make a big pot of this soup when I'm sick or after a

holiday like Halloween or New Years, when I'm prone to overindulge. The kombu is
