I've never gotten rice to pop. i'll try again.

Baked Lemon Dill Rice

Amount Measure Ingredient -- Preparation Method

1 cup brown rice

2 cups water

1/2 teaspoon salt

2 tablespoons dill weed -- or to taste

2 tablespoons minced lemon zest

 

Wash rice and drain in a strainer. Heat heavy bottomed skillet over medium high

heat. When hot, add rice. Keep the rice moving, making sure each grain gets

turned. Once the moisture has evaporated, reduce the heat to medium low and move

the rice around by flipping or moving the pan. When the grains are dry they will

begin to pop. Remove from heat.

 

Combine all ingredients in a heavy baking dish; cover and bake in a preheated

350F oven for 50 to 60 minutes or until the grain has swelled and absorbed the

liquid.

 

SERVING SUGGESTIONS:

* dill-flavored nut sauce.

* lemon butter and roasted tamari almond slivers

 

VARIATIONS:

* basmati brown rice or other rice varieties will work well.

* bring water and lemon zest to a boil then add the rice and seasonings
