Foster's Market's Tomato Spinach Soup

3 tablespoons butter

2 tablespoons olive oil

2 large yellow onions -- diced

4 celery ribs -- diced

8 garlic cloves -- minced

2 28-oz cans chopped tomatoes

6 cups vegetable broth

4 bay leaves

1 tablespoon marjoram

1 tablespoon kosher salt

2 teaspoons black pepper

8 cups firmly packed spinach leaves -- washed and stemmed

10 fresh basil leaves -- very thinly sliced

 

Heat butter and olive oil in a large saucepan over medium-low heat. Add onion

and cook, stirring, about 15 minutes. Add celery and cook, stirring

occasionally, 5 minutes. Add garlic and cook, continuing to stir, about 5

minutes.

 

Add tomatoes, broth, bay leaves, marjoram, salt and pepper and bring to a low

boil. Reduce heat to a simmer and cook, uncovered, for about 1 hour.

 

Remove from heat and add 4 cups spinach leaves, stirring until spinach is

wilted. Place soup, in several batches, in bowl of a food processor fitted with

a metal blade, and puree until smooth. Roughly chop 4 cups of spinach and add to

pureed mixture. Stir until combined and spinach is wilted. Stir in basil leaves

and serve. The soup can be refrigerated for up to 4 days.
