White Beans in Cream

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 onion -- chopped

1 garlic clove -- crushed (minced)

1 cup soy cream

1 15 oz can white beans (haricot/navy, cannellini, or

butter/iima beans -- or 1/2 cup dried, cooked and soaked

squeeze of lemon juice

salt and freshly ground black pepper

freshly grated nutmeg

chopped fresh parsley -- to garnish, optional

 

Heat the oil in a medium saucepan then add the onion; cover and cook gently for

5 minutes, until tender but not browned.

 

Stir the garlic into the onion and cook for a minute or two longer.

 

Stir in the cream and leave the mixture to simmer gently for about 5 minutes,

until the cream has reduced a bit and thickened.

 

Drain the beans, discarding the liquid, and add them to the pan. Heat gently,

stirring often.

 

Add a squeeze of lemon juice and seaon with salt, pepper, and nutmeg. Make sure

it's really hot, then serve it onto warmed plates and sprinkle a little parsley

over each serving, if using.

 

Variation: White Beans and Mushrooms in Cream

Add 8 oz sliced white mushrooms to the onion when it has cooked for 5 minutes.

Cook for a further few minutes. until any liquid which the mushrooms produced

has disappeared, then add the cream and continue as described above.
