Guest guest Posted December 22, 2001 Report Share Posted December 22, 2001 * Exported from MasterCook * Tofu and Mushroom Scramble Recipe By :Rose Elliot Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 8 ounces button mushrooms -- wiped and sliced 1 package silken tofu pinch turmeric 1 tablespoon tamari soy sauce freshly ground black pepper a little chopped fresh parsley -- to ganish, optional Heat the oil in a saucepan and fry the mushrooms for 2-3 minutes, until they are beginning to become tender. Add the tofu, undrained, turmeric (this gives the dish a lovely color), and tamari. Mix well over the heat, to heat through the tofu and produce a scrambled texture. Season with freshly ground black pepper and serve immediately, sprinkled with chopped fresh parsley, if using.
