Roasted Tofu with Satay Sauce

1 10 oz package firm tofu -- drained and cubed

For the marinade:

1 garlic clove -- crushed (minced)

2 tablespoons soy sauce

2 tablespoons medium or sweet sherry

1 tablespoon rice vinegar or white wine vinegar

For the satay sauce:

2 tablespoons smooth peanut butter -- slightly rounded

5 ounces water

2 garlic cloves -- crushed (minced)

2 tablespoons creamed coconut

salt

 

Put the tofu cubes in a shallow bowl. Mix together the marinade ingredients and

pour over the tofu, stir gently, then leave for at least 2 hours.

 

When you are ready to cook, preheat the oven to 400F.

 

Drain the tofu, reserving the marinade. Put the tofu cubes on a lightly oiled

baking sheet, in a single layer, and roast in the top of the preheated oven for

25-30 minutes, until they have browned well and are fairly crisp.

 

Meanwhile make the satay sauce. Put the peanut butter into a small saucepan

with the reserved marinade and the water and heat gently, stirring, until

smooth. Stir in the creamed coconut, cut in small pieces. Season with salt.

 

Serve the hot tofu cubes with the satay sauce.

NOTES : This is a way of serving tofu that is really delicious, as well as being

easy to do. Serve it with cooked rice and an oriental-style salad or steamed

carrots, cut on the diagonaal so you have authenticly oriental oval slices, or

mangetout.

Note that you need about 2 hours for the tofu to soak up the marinade.
