Quick Tomato Soup Gartenstein

1 onion -- chopped

1 celery stalk -- chopped

1 tablespoon olive oil

48 ounces canned tomato juice

1 cup frozen peas

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried dill

1 cup cooked brown rice

 

1. In a medium stockpot, saute the onion and celery in olive oil for 5 minutes.

 

2. Add remaining ingredients except the rice and cook another 15 to 20 minutes.

 

3. Add rice and heat it through. Serve.
