Guest guest Posted December 21, 2001 Report Share Posted December 21, 2001 * Exported from MasterCook * Wild Mushroom Sauce Recipe By :Rose Elliot Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 ounce dried porcini mushrooms 2 cups water 1 small onion -- thinly sliced 1 tablespoon olive oil 2 teaspoons cornstarch 2 tablespoons Madeira 1 tablespoon soy sauce -- or tamari salt and pepper Wash the wild mushrooms to remove any grit, then put them into the water, bring to a boik and leave to soak for 30 to 60 minutes. Drain, keeping the liqud, and chop the mushrooms. Meanwhile, fry the onion in the olive oil for 10 minutes, letting it brown. Add the mushrooms and simmer for 30 minutes, until they are tender. Mix the cornstarch with the Madeira and soy sauce and add to the mushroom mixture. Bring to a bol to thicken slightly. Season with salt and pepper.
