Unfortunately, they are usually covered with oil, shortening, or meat drippings. With the versatile Roasting and Grilling Marinade (see separate recipe), however, you can enjoy crispy, roasted potatoes on holidays or any day. These can be made a few hours ahead of time, then piled in one big pan to reheat for half an hour or so, if you don't have a lot of oven space (or you can opt for the mashed potatoes). Preheat the oven to 400F. Toss the potatoes with about 2 1/2 cups of the marinade, and the optional herbs, if desired. Spread the potatoes on four large, dark cookie sheets (nonstick or lightly oiled), and sprinkle them with salt. Bake for about 1 hour, loosening them with a spatula and turning them from time to time. Move the cookie sheets from the top rack to the bottom and vice versa halfway through. If you only have room for two pans, cook two batches, then pile them all on one large or two smaller pans, and reheat them to serve.
