Mustard Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/2 teaspoon sea salt

1 tablespoon Dijon mustard -- good quality

1 tablespoon red wine vinegar

freshly ground black pepper

3 tablespoons extra-virgin olive oil

other flavoring ingredients, such as

garlic and chopped herbs -- as desired

 

Put the salt into a bowl with the mustard, vinegar, and a good grinding of black

pepper and mix together.

 

Add the oil, a little at a time, and stir or whisk until blended, then add any

other flavorings, if using.

This is a tangy mixture with a beautifully thick consistency, almost like
