Hot Fruit Compote

6 cups apple juice

3/4 pound pitted prunes

1/2 pound dried peaches

OR pears or apples

1/2 cup raisins or dried currants

1 cinnamon stick

2 whole cloves -- up to 3

1 lemon -- sliced

grate zest from lemon before slicing

Here is a delicious sugar-and honey-free version of a traditional

Russian-Jewish fruit compote.

 

Bring the juice to a boil in a large, non-aluminum saucepan. Add all the

other ingredients, except the lemon zest. Bring to a boil, then turn down,

cover, and simmer for 30 to 60 minutes, or until done to your

taste. Discard the lemon slices. Serve in bowls with some of the lemon

zest sprinkled on top.
