Bring the juice to a boil in a large, non-aluminum saucepan. Add all the other ingredients, except the lemon zest. Bring to a boil, then turn down, cover, and simmer for 30 to 60 minutes, or until done to your taste. Discard the lemon slices. Serve in bowls with some of the lemon zest sprinkled on top.
