Guest guest Posted December 19, 2001 Report Share Posted December 19, 2001 * Exported from MasterCook * Panettone Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 147 Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Fat-Free Sweet Yeast Bread Dough (see separate recipe) 2 teaspoons pure almond extract 1 tablespoon anise seed (crushed or ground -- if possible) 1 cup candied fruitcake mix OR chopped mixed dried fruits 1/2 cup raisin ***IF DESIRED*** Powdered Sugar Glaze OR White Glaze and colored candy sprinkles (see separate recipes) Makes 3 loaves I always make this Italian sweet bread at Christmas-it makes great toast! To the Fat-Free Sweet Yeast Bread Dough, add 2 teaspoons pure almond extract, 1 tablespoon anise seed (crushed or ground, if possible), 1 cup candied fruitcake mix or chopped, mixed dried fruits, and 1/2 cup raisins. Form the risen dough into 3 round loaves. Cut a cross 1/2 " deep across the top of each loaf, using a razor blade or sharp knife. Rise until doubled. Brush the tops of the loaves with soymilk before baking as directed in the Yeast Bread recipe.
