Spanakopita (Spinach Pie)

Amount Measure Ingredient -- Preparation Method

1 large onion -- chopped

1 bunch green onions -- chopped

1/2 pound butter

1 tablespoon fresh dill -- chopped

1 tablespoon fresh mint -- chopped

1 package frozen chopped spinach

1/4 pound Feta cheese

1 tablespoon grated Parmesan cheese

2 eggs

1 pound filo dough

 

Defrost spinach and squeeze thoroughly. In large skillet, melt 1/4 cup

butter and sauté onions. Add dill, parsley, and mint. Add spinach and

pinch of salt. Sauté for five minutes. Remove from heat and cool. Beat

eggs, add to cool spinach mixture. Add crumbled Feta and Parmesan cheeses.

 

Take a sheet of filo dough. Butter top side. Take 1/5 of the spinach

mixture and place at bottom of the sheet. Roll over once, tuck in sides,

and continue to roll. Brush finished roll with butter.

 

Bake at 350 degrees for 30 minutes. Makes five large rolls, or use half

sheets of filo dough, smaller amount of spinach mixture and make 20 to 25

appetizer-sized rolls.

 

May be frozen and layered between sheets of wax paper. Thaw and bake as

described above.
