Roasted Red Tomato Sauce

4 pounds garden-grown red tomatoes

1/4 cup olive oil

1/2 cup minced sweet onion

3 cloves garlic -- minced

Sugar to taste

Salt and freshly ground black pepper -- to taste

Minced fresh basil, thyme or -- rosemary to taste

 

Spray a well-scrubbed grill with Pam and heat until hot. (We like to add

some hickory, apple, or cherrywood chips just before the food is placed on

the grill.) Carefully arrange the tomatoes over the heat and turn often. The

goal is to blister the tomatoes evenly, not to burn them. When they are well

blistered, remove the tomatoes from the grill and let them sit until they

are cool enough to handle. Remove stems and any burned skin areas, then

coarsely chop the roasted tomatoes.

 

Heat olive oil over low heat in a heavy-bottomed 3-quart pot. Add onion and

garlic and cook slowly until onion becomes transparent. Then add tomatoes.

After 20 minutes, taste mixture and add sugar, salt and pepper. Cook over

low heat for 40 minutes. Remove pot from heat and let cool for 15 minutes.

 

Puree tomatoes in a food mill and discard skin and seeds. Season with herbs

according to your taste.
