Guest guest Posted December 18, 2001 Report Share Posted December 18, 2001 * Exported from MasterCook * Apple-Berry Cake Recipe By : Vegetarian Times Vegetarian Entertaining, page 171 Serving Size : 12 Preparation Time :0:00 Categories : Cakes And Frostings Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup orange juice 1/2 cup canola oil 1 cup granulated sugar 1 cup brown sugar 2 large eggs 2 teaspoons vanilla extract 4 cups diced red apples -- (about 6 medium) such as Cortland or Ida Red 1 1/2 cups blueberries fresh or frozen and thawed 3 cups unbleached white flour 1 tablespoon baking powder 1 teaspoon salt 1 teaspoon nutmeg 1 teaspoon cinnamon 1 cup diced walnuts or pecans Makes 12 servings. Preheat the oven to 250F. In a large mixing bowl, blend together the orange juice, oil, and sugars until fully incorporated. Beat in the eggs and vanilla until creamy. Fold in the apples and berries. In a separate medium mixing bowl, combine the flour, baking powder, salt, nutmeg, and cinnamon. Fold the dry mixture into the wet batter. Fold in the nuts. Pour the batter into 2 lightly greased 9-inch round cake pans or springform pans. Place pans on the middle rack of the oven and bake until a toothpick inserted in the center comes out clean, about 50 to 55 minutes. Set on a rack to cool for 30 minutes to 1 hour.
