Wonderful Winter Squash

4 cups pumpkin cubes -- see directions

1/2 cup water

2 teaspoons soy sauce

2 tablespoons maple syrup

 

Select one medium-sized (2 to 2.5 pound) winter squash (butternut or kabocha,

for example). Cut squash in half, then peel it and remove the seeds. Cut squash

into 1-inch cubes (you should have about 4 cups).

 

Place cubes into a large pot with the water. Add soy sauce and syrup. Cover and

simmer over medium heat for 15 to 20 minutes, or until squash is tender when

pierced with a fork.

 

Nutrition information per 1/2-cup serving: 52 calories, 1 g protein, 11 g

carbohydrate, 0 g fat, 0 mg cholesterol, 78 mg sodium.
