Serving Size : 6 Preparation Time :0:00 Categories : Desserts Entertaining Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large slightly underripe pears with stems 2 tablespoons lemon juice 1 cup orange juice 2 cups hearty red wine (zinfandel or burgundy) 1 teaspoon honey 2 teaspoons cinnamon fresh mint leaves 6 long strands orange peel 1. Core whole pears from bottom, using a melon baller, leave stems intact. Peel the pears. 2. In a deep saucepan mix the juice, wine, honey and cinnamon. Bring to a boil. Add pears and simmer until they become deep red in color and softened (about 35 minutes). Drain pears and chill, reserving liquid for garnish or another use. 3. Using a zester or canelle knife, pull long (8 to 10 inches) strands of zest from the orange; one long peel per pear. 4. Serve: Add a tablespoon or two of the liquid or use fresh orange juice in the bottom of each bowl. Center the pear, standing upright. Wrap a strand of orange zest in a spiral from the top to the bottom of each pear. Garnish with a sprig or two of fresh mint leaves. VARIATIONS: * replace honey with maple syrup; cinnamon with allspice. * poach pear with juice (apple, cranberry, orange, grapefruit). Add food coloring as necessary to stain the fruit.
