Almost No-Fat Brownies

1 cup Sucanat or sugar

4 ounces reduced-fat medium-firm regular tofu

1/2 cup unsweetened cocoa or carob powder

1/4 cup water

4 teaspoons powdered egg replacer

1 tablespoon coffee or coffee substitute granules

2 teaspoons pure vanilla extract or liqueur -- up to 3

1 1/2 teaspoons vinegar

1/3 cup unbleached flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

 

Makes 16 bars

 

If you prefer, you can make these delicious morsels with carob powder

instead of cocoa. For a rich treat, spread the bars with a thin layer of

Lean Mocha Frosting (see separate recipe).

 

Preheat the oven to 350F. In a blender or food processor, mix the sugar,

tofu, cocoa, water, egg replacer, coffee granules, vanilla, and vinegar

until smooth.

 

In a medium bowl, whisk together the flour, salt, baking powder, and

soda. Add the cocoa mixture and mix briefly.

 

Pour the mixture into a nonstick, lightly oiled, or sprayed 7 " x 11 " or 8 "

x 8 " cake pan, and spread evenly. Bake 25 minutes. Cool on a rack in the

pan, then cut into 16 bars.

 

Per brownie: Calories: 72, Protein: 2 gm, Fat: 0 gm, Carbohydrates: 14 gm.
