OK, I made the name up...

 

I am sending one more latke recipe because this one calls for an ingredient I

don't think I've even seen in a recipe before - a vitamin C tablet! It doesn't

say how many mg it should be or whether it should be the chewable kind or what.

If you try this I guess you will have to figure it out for yourself :-)

Chanukah Latkes with a Capital C

1 vitamin C tablet

4 large baking potatoes -- peeled

1 onion -- peeled

2 eggs -- lightly beaten

1 teaspoon salt

1/4 teaspoon baking powder

2 tablespoons flour or matzah meal

vegetable oil -- for frying

applesauce/sour cream (regular or

non-dairy) -- for serving

 

Place vitamin C tablet in a small bowl with 2 tablespoons hot water to dissolve.

 

Shred potatoes using a hand shredded or food processor. Shreds should not be

too large. Put potatoes in a bowl and stir in the dissolved vitamin C.

 

Shred or finely chop onion. Add to potatoes. Stir in eggs, salt, baking powder

and flour or matzah meal until incorporated. Fry the latkes immediately.

 

In a large skillet, heat 1/2 inch oil over medium high heat. Using a slotted

spoon, spoon about 2 tablespoons batter into hot oil for each latke. Do not

crowd. Flatten slightly with the back of a spoon. Fry latkes until golden

brown on both sides, turning once. When you reach the end of the batter,

squeeze it lightly to remove excess liquid. After frying place latkes on paper

towels to drain.

 

Latkes may be kept warm in a low oven in a single layer on a baking sheet, for 1

hour. They can also be frozen and reheated.

 

Serve with applesauce and/or sour cream if desired.
