Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces fresh green beans cut into 1-inch pieces 2 tablespoons olive oil 1 small yellow onion -- chopped 1 red bell pepper cut into 1/4-inch dice 2 garlic cloves -- minced 4 scallions -- minced 2 large ripe tomatoes -- coarsely chopped 1/4 cup minced flat-leaf parsley 1 teaspoon minced fresh marjoram salt and freshly ground black pepper 2 tablespoons chopped fresh basil 1 pound radiatore freshly shaved Parmesan OR grated soy Parmesan cheese Serves 4 Although not usually considered a part of French haute cuisine, noodle dishes are popular throughout France, and the classic Provençale vegetable melange marries perfectly with the chewy radiatore. For a heartier meal, add a can of chickpeas or cannellini beans. Use canned diced tomatoes if fresh are unavailable. Cook the green beans in boiling water until crisp tender, about 5 minutes. Drain and set aside. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook until soft, about 5 to 7 minutes. Stir in the garlic and scallions, and cook 1 minute longer. Add the tomatoes, parsley, marjoram, and green beans. Season with salt and pepper to taste, and cook until the vegetables are soft, about 5 to 10 minutes. Stir in the basil and keep warm over low heat. Cook the radiatore in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 minutes. When the pasta is cooked, drain it and place in a large serving bowl. Add the radiatore and vegetables, and toss gently to combine. Top with a small amount of cheese and serve immediately, passing additional cheese at the table.
