Guest guest Posted December 13, 2001 Report Share Posted December 13, 2001 * Exported from MasterCook * Blueberry Muffins Recipe By :Karen Alexander, M.A. Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup fresh blueberries 1 cup whole wheat pastry flour 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 cup wheat germ 3 tablespoons applesauce 1/4 cup Sucanat 1 1/2 teaspoons Ener-G egg replacer + 2 tablespoons water 3/4 cup low fat soy milk 1 3/4 teaspoons baking powder Preheat the oven to 375F. Lightly coat a twelve cup muffin tin with cooking spray. Wash and drain the berries. In a large bowl, mix together all the ingredients except for the blueberries and baking powder. When well mixed, add the remaining ingredients and mix again. Spoon into the muffin tins and bake for 15-20 minutes, or until lightly browned.
