Guest guest Posted December 13, 2001 Report Share Posted December 13, 2001 * Exported from MasterCook * Oat Bran Muffins Recipe By :Karen Alexander, M.A. Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups oat bran 1 1/4 cups soy milk -- or rice milk 1 tablespoon baking powder 1 1/2 teaspoons Ener-G egg replacer + 2 tablespoon water 1/2 teaspoon cinnamon 1/4 cup shredded coconut 2 large overripe bananas 1/4 cup maple syrup 2/3 cup fresh blueberries -- or frozen Preheat the oven to 450F. Lightly coat muffin tins with cooking spray. Combine all dry ingredients in a mixing bowl. Blend all other ingredients (if you use blueberries, it's easier if you add them by hand to the filled muffin tin) into a puree and mix thoroughly with the dry ingredients. Fill muffin tins, allowing some room for mix to rise. Bake until top of muffins are brown (about 15 minutes). As soon as they're cool, bag them and put them in the freezer.
