Guest guest Posted December 13, 2001 Report Share Posted December 13, 2001 * Exported from MasterCook * Fruit, Flax & Bran Muffins Recipe By :Karen Alexander, M.A. Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups whole wheat pastry flour 2 apples -- peeled and shredded 3/4 cup flaxseed meal 1/2 cup organic raisins -- optional 3/4 cup oat bran 1 cup Sucanat 3 teaspoons Ener-G egg replacer + 4 tablespoon water 2 teaspoons baking soda 1 teaspoon baking powder 3/4 cup vanilla rice or soy milk 1/2 teaspoon salt 3 tablespoons applesauce 2 teaspoons cinnamon 1 teaspoon vanilla 1 1/2 large carrots -- finely shredded Preheat oven to 350F. In a large bowl, combine flour, flaxseed meal, oat bran, Sucanat, baking soda, baking powder, salt, and cinnamon. Stir in carrots, apples, and raisins. In a medium bowl, whisk together egg replacer and water. Add rice or soy milkkk, applesauce, and vanilla. Combine wet ingredients with dry ingredients, just until moist. Do not overmix batter. Fill muffin cups 3/4 full and bake for 15-20 minutes.
