Apple Walnut Salad with Cranberry Vinaigrette

1 red delicious apple

1 granny Smith apple

lemon juice

1/4 cup fresh or frozen cranberries -- thawed

1/4 cup balsamic vinegar

1 tablespoon red onion -- chopped

1 tablespoon sugar, plus 1 more pinch

1 teaspoon dijon mustard

1/2 cup walnut oil

1/4 cup canola oil

1/4 cup water

salt -- to taste

pepper -- to taste

10 cups mixed baby greens

1/2 cup walnuts -- chopped and toasted

 

Core the apples and slice them very thin. Place apple slices in a bowl of ice

water with lemon juice to keep them from discoloring. Set aside.

 

Place cranberries in the container of a food processor fitted with a knife blade

and process until smooth. Add vinegar, onion, sugar and mustard and process

until well blended. With processor running, gradually add the oils and water in

a steady stream until well blended.

 

Transfer to a small bowl. Season to taste with salt and pepper. Dressing can

be made a day ahead if desired. Cover and refrigerate. To serve, bring

dressing to room temperature and whisk to blend. Do not slice the apples until

ready to serve.

 

Combine the greens and apples in a large bowl. Toss with enough dressing to

coat. Sprinkle with walnuts.
