Seriously, you can probably use lower fat/calorie substitutions for some of the higher fat/calorie ingredients in these recipes. Miriam * Exported from MasterCook * Nutty Butter Crisps Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 tablespoons butter 1/3 cup sugar 1 tablespoon additional sugar 1 tablespoon heavy cream 1 cup almonds -- sliced or slivered Preheat the oven to 350 degrees. Line with parchment paper as many cookie sheets as you can fit into the oven at one time. In a saucepan, slowly bring the butter, sugar and cream to the boiling point, stirring constantly for about 4 minutes. Add the nuts and cook at a fast boil, continuing to stir, until slightly caramelized (pale gold in color,) about 1 minute. Remove from heat immediately and leave to firm up for 10 minutes. Using 2 teaspoons to shape the cookies, scoop up a small amount of the mixture with one spoon and push it off with the other in a little mound onto the prepared cookie sheet, leaving 3 inches between cookies to allow them room to spread. Bake for about 12 minutes until golden brown. Cool for 2 or 3 minutes, then use a spatula to lift them off the paper and onto a cooling rack. Repeat, using the same parchment paper, until all the mixture has been baked. Arrange decoratively on a small platter and serve with coffee or tea as an after-dinner treat.
