Again, I have the names of the books they come from but not the authors. This sounds interesting. I guess it's supposed to look like a pyramid. Miriam * Exported from MasterCook * Couscous el Souk Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cinnamon sticks, 3 1/2 inches long 1 teaspoon ground turmeric 2 cups fine couscous 1 teaspoon salt 1/8 teaspoon white pepper 1/8 teaspoon black pepper Place 3 1/2 cups water, cinnamon sticks, 3/4 tsp. tumeric, salt and both peppers in medium pot with cover. Bring almost to a boil, lower heat to medium, cover and cook for 5 minutes. Remove cover and add couscous. Continue to cook for 2 to 3 minutes, stirring constantly, until most of the liquid is absorbed. Remove from heat and fluff with a fork. Replace cover and let sit for 5 or 6 minutes. Fluff with a fork again and add salt to taste. Mound hot couscous on a platter in a pyramid shape. Cur cinnamon sticks in half lengthwise and place equidistantly on sloping sides of couscous. Sprinkle with remaining 1/4 tsp. tumeric. Serve immediately.
