Quinoa Fritters

Amount Measure Ingredient -- Preparation Method

1 cup Quinoa -- divided

1 cup flour

2 eggs

1/2 bottle beer

1 tablespoon Baking Powder

1 teaspoon baking soda

1 1/2 cups buttermilk

1/2 cup fresh herbs -- your choice

1 Pinch salt

Black pepper -- to taste

butter or oil for frying

 

Toast the quinoa in a dry saute pan. Grind 3/4 of the quinoa into “flour” in a

spice mill.

 

In a large mixing bowl, place the all of the dry ingredients and make a well in

the center. Add your wet ingredients and slowly incorporate. Finish with the

herbs, pinch of salt and black pepper.

 

Fry in a small amount of clarified butter or vegetable oil until golden brown

and cooked through. Drain on paper towels and keep warm.

 

Yield is approximate.
