Serving Size : 4 Preparation Time :0:00 Categories : Pastry Pizza Sandwich Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound whole wheat pastry dough 1 cup cauliflower flowerets 1/2 cup chopped carrot 1/2 cup diced green beans 1/2 green bell pepper -- diced 1/2 cup roasted peanuts (no salt) 2 eggs 1 cup lowfat 1% milk 2 ounces Edam cheese -- grated salt and black pepper Line 1 large or 4 small flan dishes with pastry and bake blind at 400F Blanch all the vegetables, refresh in cold water and divide among the pastry cases. Roughly chop the peanuts and sprinkle evenly over the vegetables. Beat the eggs and milk together. Mix in the cheese, season and pour the mixture over the vegetables. Bake the flan at 350F for about 25 minutes, until the filling is set. Serve hot or cold accompanied by tomato sauce. VARIATION: Experiment with different vegetables, nuts and cheese GARNISH: Chicory leaves; scallion fleuron; mint leaf; celery top; sliced radish; baby sweet corn Bake Blind To bake a pie crust without the filling. Place a sheet of wax paper in the line flan or pie pan and fill with metal weights or dried beans (to keep the pastry from bubbling). Bake at 400F for about 15 minutes. Remove the beans and paper and bake for additional 10 minutes to dry and lightly brown.
