Recipe By : The Cooking Cardiologist, by Richard Collins, page 111

Serving Size : 2 Preparation Time :0:00

Categories : Main Dishes, Vegetarian Pasta, Couscous, Etc.

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 ounces elbow macaroni -- uncooked

1 cup non-fat milk

2 slices Kraft fat free cheddar cheese singles

2 scoops VEGE FUEL protein powder

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons flour

Serving Size: 2

Preheat oven to 350 degrees. Boil the macaroni in 1 quart of lightly

salted water until tender. Meanwhile, mix the Vege Fuel with the milk

until blended. Pulse several times, until all of the lumps have

dissipated. Pour the mixture into a small saucepan and whisk in the

flour. Bring the mixture to a boil over medium heat, whisking constantly

until the mixture begins to thicken. Once the mixture starts to boil,

reduce the heat to just barely boiling and continue to stir as the mixture

begins to thicken. Continue to cook for 2 or 3 minutes, stirring

constantly until the mixture is smooth and free of lumps. Break the cheese

into small pieces and whisk them into the Vege Fuel mixture. Once the

cheese is melted and blended, add the drained macaroni, remove from the

heat and stir to evenly coat the pasta. Pour the macaroni and cheese into

a lightly sprayed baking dish and bake for 20 to 30 minutes, until golden

brown on top.

Vege Fuel is a highly digestible protein powder that contains a pure

isolated Soy (all-vegetable) protein.

Optional: Soy milk can be substituted for the skim milk for added protein,

it would add small amount of fat.
