Baked Oatmeal

3 cups oatmeal

1 cup Sucanat

2 teaspoons baking powder

1/2 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup applesauce

1 teaspoon vanilla

1 tablespoon Ener-G egg replacer + 4 tablespoons water

1 cup oat milk

1/2 cup organic raisins or blueberries -- 1/2 to 1 cup

 

Preheat the oven to 350F.

 

In a large bowl, mix together the oatmeal, Sucanat, baking powder, cinnamom, and

salt. In another bowl, mix together the applesauce, vanilla, egg replacer,

water, and oat milk. Combine the dry and the wet ingredients. Stir in the

fruit. Pour into a 9-inch square pan that has been lightly coated with cooking

spray. Bake for 25-30 minutes.
