Guest guest Posted December 11, 2001 Report Share Posted December 11, 2001 * Exported from MasterCook * Pad Thai (Abensur) Recipe By :Nadine Abensur Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 250 grams noodles -- cook, hot 2 tablespoons peanut oil 250 grams bean sprouts spring onions -- finely chopped 2 eggs SAUCE: 6 finely chopped garlic cloves 1 finely chopped bird's eye chile 1 piece ginger (thumb) -- grated and juice squeezed out 2 tablespoons soft brown sugar 2 tablespoons fresh coriander (cilantro) 1 tablespoon tamarind paste -- mixed with 90 milliliters hot vegetable stock 1 tablespoon oil chopped peanuts -- for garnish Heat oil in a wok. Toss in bean sprouts and a large bunch of spring onions, finely chopped, and very quickly stir-fry. Then break eggs into the wok and leave for several seconds before stirring into drained, just-cooked noodles. For the sauce: mix garlic, chile, a thumb of ginger grated and squeezed of every drop of juice, brown sugar, coriander, blend of tamarind paste and vegetable stock and oil. Pour over the noodles and vegetables and sprinkle chopped peanuts over the top.
