Winter Pear And Blue Cheese Salad

Amount Measure Ingredient -- Preparation Method

2 1/2 tablespoons water

1 tablespoon olive oil

1/2 teaspoon walnut oil

(available ingourmet food stores)

1/2 teaspoon minced shallot or green onion

1/4 teaspoon freshly ground black pepper

1/2 cup washed and torn Buttercrunch or other

OR other leaf lettuce

1/2 cup watercress

1/4 cup chopped radicchio

1 ripe Bosc pear -- peeled

cored and thinly sliced

1 teaspoon crumbled blue cheese

 

Serves 2.

 

Just a hint of rich blue cheese heightens the sweetness of this pear salad.

 

In small bowl, whisk together water, olive oil, walnut oil, shallot and

pepper. Let stand 30 minutes at room temperature.

 

In salad bowl, combine lettuce, watercress, radicchio, pear and

cheese. Add dressing and toss to lightly coat. Mound generous servings on

two salad plates and serve immediately.
