Guest guest Posted December 9, 2001 Report Share Posted December 9, 2001 * Exported from MasterCook * Artichokes With Lemon Sauce Recipe By : Healthful Cooking with Mary Carroll, Star Tribune 12/01 Serving Size : 2 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup plain nonfat yogurt 1/3 cup fresh lemon juice 2 tablespoons undiluted frozen apple juice concentrate -- thawed 2 tablespoons Dijon mustard 1 teaspoon minced fresh garlic 1 teaspoon curry powder 2 artichokes 1 lemon -- quartered Serves 2. Leftover dipping sauce keeps one week in the refrigerator in a covered container. In medium bowl, whisk together yogurt, lemon juice, apple juice concentrate, mustard, garlic and curry powder. Let stand 25 minutes at room temperature to allow flavors to blend. With kitchen shears, clip points from artichoke leaves. Bring 3 quarts water to boil, add lemon and artichokes. Boil, uncovered, until tender, about 25 minutes. Drain. Remove chokes from each artichoke. Center each artichoke on small plate. Spoon dipping sauce into each cavity or small bowl.
