Artichokes With Lemon Sauce

Amount Measure Ingredient -- Preparation Method

2/3 cup plain nonfat yogurt

1/3 cup fresh lemon juice

2 tablespoons undiluted frozen apple juice concentrate -- thawed

2 tablespoons Dijon mustard

1 teaspoon minced fresh garlic

1 teaspoon curry powder

2 artichokes

1 lemon -- quartered

 

Serves 2.

 

Leftover dipping sauce keeps one week in the refrigerator in a covered

container.

 

In medium bowl, whisk together yogurt, lemon juice, apple juice

concentrate, mustard, garlic and curry powder. Let stand 25 minutes at

room temperature to allow flavors to blend.

 

With kitchen shears, clip points from artichoke leaves. Bring 3 quarts

water to boil, add lemon and artichokes. Boil, uncovered, until tender,

about 25 minutes. Drain. Remove chokes from each artichoke.

 

Center each artichoke on small plate. Spoon dipping sauce into each cavity

or small bowl.
