Guest guest Posted December 7, 2001 Report Share Posted December 7, 2001 idea from aboutproduce.com -- An idea to try when we want sweet savory pasta. * Exported from MasterCook * Savory Date Nut Pasta Recipe By :PBH: California Date Commission Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup pitted California dates -- chopped 8 cups loosely packed spinach leaves 1/2 cup toasted chopped walnuts 1/3 cup olive oil 1 cup feta cheese -- crumbled (4 oz.) 2 tablespoons lemon juice 1/8 teaspoon black pepper 1/2 pound fettucine 1 clove garlic -- minced 1 tablespoon olive oil 1/3 cup fresh bread crumbs 1. Wash spinach leaves, spin dry and finely chop. 2. Toss dates and spinach together in a large bowl with walnuts, 1/3 cup olive oil, feta cheese, lemon juice and pepper. Set aside. 3. In a small skillet saute garlic in 1 tbsp olive oil about 30 seconds. Stir in bread crumbs and cook until lightly brown. 4. Meanwhile, cook pasta in salted water until tender. Drain and toss with spinach mixture. Divide evenly among serving plates. Sprinkle each serving evenly with bread crumbs.
